I think it should stay taxed until the end of the month it is sold in, allowing the new owner to drive it home legally

In this day and age of online registration and payments, there is no reason that the car cannot be taxed or ended from ownership/SORN on any day of the month and not loose out on a days tax, let alone a month. Its daylight robbery and if a utility or bank was charging in a similar way then OFCOM or the Banking Ombudsman would be all over it, let alone TV's Watchdog. Thieving bar stewards!!

And one more thing, car insurance should also be similar and not full of speed bumps and potholes of penalty charges. Rant over

Its simply promoting people driving illegally. I certainly won't be very interested in taxing a car until thr 1st of the following month
